Ingredients

For the Sandwich:
  • 1 (12-ounce) can SPAM® Classic sliced
  • 1 egg
  • 1 pineapple peeled, cored, and sliced into rounds*
  • Cayenne pepper to taste
  • 1 tablespoon olive oil
  • Telera roll

*Substitute 1 (10 oz) can pineapple slices

For the Scallion Aioli:
  • 1 cup mayonnaise
  • 2-3 tablespoons fresh scallions finely chopped
  • 1-2 garlic cloves minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation

For the Scallion Aioli:

  • In a small bowl, combine mayo, chopped scallions, minced garlic, lemon juice, and olive oil.
  • Add salt and pepper to taste, and stir until well combined. Set aside.

For the Sandwich:

  • Slice the SPAM® into a single thick piece.
  • In a nonstick skillet, heat 1 tablespoon of olive oil over medium heat. Crack the egg into the skillet and cook until the whites are set, and the yolk is cooked to your liking (sunny-side-up or over-easy). Set the egg aside on a plate.
  • In the same skillet, cook the SPAM® slice until golden and crispy on both sides, about 2-3 minutes per side.
  • Grill the pineapple slices in the same pan (or on a grill) for 1-2 minutes per side until slightly caramelized. If using canned pineapple, simply sear them in the pan for a minute or so to warm them up. Season with a pinch of cayenne pepper to taste.
  • Toast the telera roll and spread a generous amount of the scallion aioli on both sides. Layer the cooked SPAM®, grilled pineapple slices, and fried egg.
