Mamala’s Mahi Mahi

Vice President Kamala Harris served roasted mahi mahi at her first official dinner at the Naval Observatory. This dish was served with ginger cilantro basmati rice and grilled vegetables.

Homemade Blackened Mahimahi White Fish

Ingredients

  • 4 mahi mahi fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 lemon sliced
  • 2-3 cloves garlic minced
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • Fresh herbs for garnish (like parsley or cilantro) optional

Directions

Preheat your oven to 400°F.

Prepare the Fillets:
  • Pat the mahi mahi fillets dry with paper towels.
  • Brush both sides of each fillet with olive oil and season generously with salt, black pepper, paprika, and dried oregano.
Add Flavor:
  • Place the fillets on a baking sheet lined with parchment paper or lightly greased.
  • Scatter the minced garlic over the fillets.
  • Arrange lemon slices on top of the fillets.
Roast:
  • Roast the mahi mahi in the preheated oven for about 12-15 minutes, or until the fish is opaque and flakes easily with a fork. The exact time will depend on the thickness of the fillets.
Serve:
  • Garnish with fresh herbs if desired.
  • Serve with ginger-cilantro basmati rice and grilled vegetables.
