Ingredients

• 1 fresh coconut
• 2 oz Jamaican coconut rum
• 1 oz coconut water (from the fresh coconut or store-bought)
• 1 oz pineapple juice
• ½ oz lime juice
• Ice cubes
• Pineapple slice or lime wedge for garnish

Preparation

Prepare the coconut:

• Carefully open the top of the fresh coconut by piercing a hole or cutting off the top with a sharp knife.
• Drain the coconut water and set aside.

Mix the cocktail:

• In a shaker, combine the Jamaican rum, coconut water, pineapple juice, and lime juice.
• Add a handful of ice and shake well until chilled.

Serve in the coconut:

• Pour the cocktail into the hollowed-out coconut.
• Add a few ice cubes to keep it cold.
• Garnish with a pineapple slice, lime wedge, or even a little American flag for a patriotic flair.
