Slow Roasted Pork Tenderloin

Ingredients

  • 1.5 to 2 lbs pork tenderloin
  • 1 cup fresh basil leaves chopped
  • 4 cloves garlic minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons sweet paprika
  • 2 tablespoons olive oil
  • Lemon wedges for serving, optional

Preparation

  • In a small bowl, combine the chopped basil, minced garlic, salt, pepper, sweet paprika, and olive oil. Mix well to form a paste.
  • Pat the pork tenderloin dry with paper towels. Rub the marinade all over the tenderloin, making sure to coat it evenly. Let it marinate overnight in the fridge.
  • Preheat your oven to 275°F.
  • In a skillet over medium-high heat, add a little olive oil. Sear the tenderloin on all sides for about 2-3 minutes until browned.
  • Transfer the tenderloin to a roasting pan or baking dish. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F.
  • Once done, remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing. This helps keep the meat juicy.
  • Slice the pork tenderloin and serve it with lemon wedges if desired. It pairs well with roasted vegetables or a fresh salad.
