Ingredients
For the Tuna Salad:
1 can (5-6 oz) tuna drained
2 tablespoons mayonnaise
1 tablespoon Dijon mustard optional
1 celery stalk finely chopped
¼ cup red onion finely chopped
1 tablespoon fresh parsley chopped
Salt and black pepper to taste
For the Sandwich:
4 slices of bread such as sourdough, rye, or whole wheat
4 slices of cheddar cheese
1 tablespoon butter
Directions
Make the Tuna Salad:
In a bowl, combine the drained tuna, mayonnaise, Dijon mustard, celery, red onion, and parsley. Mix until well combined.
Season with salt and black pepper to taste.
Grill the Sandwich:
Preheat a skillet or griddle over medium heat.
Spread butter on one side of each slice of bread.
Place two slices of bread, buttered side down, on a clean surface. On each slice, layer some of the tuna salad and a slice of cheese.
Top with the remaining slices of bread, buttered side up.
Place the sandwiches in the preheated skillet or griddle. Cook for about 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted.
Serve:
Remove the sandwiches from the skillet and let them cool for a minute or so before cutting in half.
